- 1/2 cup almond flour
- 1/2 cup granulated sugar (for filling)
- 1/4 cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 tsp almond extract
- 1/4 cup apricot jam (optional, for glazing)
Instructions:
- Prepare the Crust:
- In a large bowl, mix the flour and sugar. Add the cold butter and rub it into the flour mixture until it resembles coarse crumbs.
- Add the egg yolk and cold water, mixing until the dough comes together. Form the dough into a disc, wrap it in plastic, and refrigerate for at least 30 minutes.
- Make the Filling:
- In a medium bowl, cream together the almond flour, granulated sugar, and softened butter until light and fluffy.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla and almond extracts.
- Assemble the Tart:
- Preheat the oven to 350°F (175°C). Roll out the chilled dough on a lightly floured surface and fit it into a 9-inch tart pan. Trim any excess dough.
